So what do you do when you go to the Farmer's Market and discover a basket of peaches that usually costs $12 is only $5 because they are sooo ripe and have a few bruises? Me? I buy them and find a recipe to make with them!
Even when some of the spots need to be cut off the peaches? Yes!! These are the best peaches to bake with! They are so juicy and ripe! Perfect for...
An Alabama Peach Cake!
First, you're going to need some of these juicy, ripe peaches. Then you're going to need to pull some sugar, flour, and baking powder out of your pantry. Then grab the milk, a stick of butter and a lemon out of the fridge. Now you're ready to make one of the yummiest, southern desserts I've eaten in the three years since I've lived in Alabama!
Ok, start off by preheating your oven to 350 degrees.
Then, carefully dice up your juicy, ripe, peaches. Cut off the bad spots, wipe the drool from your mouth and refrain -- which means -- only eat every third piece so you'll have enough to make this dessert.
When you're done cutting, you should have four cups of yummy, ripe, delicious, juicy peaches! Don't they look purty?
Ok, now you're ready to make your batter. In a separate bowl, mix 1 cup of sugar, 1 cup of flour, 2 teaspoons of baking powder, and 1 cup of milk to make your cake batter. It will look slightly runny; almost like pancake batter. All together now, what did we make? Batter!
Now cut your stick of butter into small pieces. And can I say something here? Please use real butter. Not margarine. Not unsalted. Just regular, yummy, fattening butter! It'll make your cake taste so much better! And yeah, ok, I admit it. These are not my hands! No, these are the hands of my cooking buddy, Melody. Aren't her hands lovely? And isn't she cutting up that butter just perfectly? Yes? Ok, so...you want to cut up your butter. And you want to try and get it perfect, just like this, ok? Really. It matters!
Then put the butter all over the bottom of a 9x13 baking dish. You might have a nice, shiny, clean, glass Pyrex. Me? I have an old, seasoned, brown, baking stone. Wanna make something of my ugly pan? No? Didn't think so!
Now pour that runny cake batter into your baking dish on top of the butter. It will look something like this. Yep, that looks just about right!
It's time folks! Pour those four cups of yummy, ripe, delicious, juicy, purty, peaches on top of the batter! And try really, really hard not to pick up a piece or two or ten and pop them into your mouth! Come on, you know you'd be slapping the kids' hands if they were doing it! Now stop that! No more!!
To prevent half of the peaches from disappearing off your cake, I suggest you pop it into your preheated oven. It should bake for approximately 30-35 minutes. You'll know it's done when you do the old toothpick test method. You know...stick the toothpick in, and when it comes out clean, the cake is done. Oh, I almost forgot. Don't get alarmed when you pull your cake out of the oven. Because it will look like some peach thief has eaten far more than half of your peaches. Before you go around accusing your first born, your last born, and the dog, I want to tell you...that's what happens to this cake. Most of the batter rises to the top, and the peaches sink all over the cake. So they're in every bite you take. That's the sheer genius of this cake! Yum!
Now, this is supposed to yield approximately 12 servings! But I can attest, there are only four people in my house right now, and we were able to demolish this baby in less than 3 sittings!
So, serve it hot, cold, with ice cream, whipped cream, or plain...for breakfast, dessert, snack, or all three. Any way you want to eat this Alabama Peach Cake, it's nothing less than heavenly!
